Funnies...

Two quick funnies from today...

Aleena and I were cleaning her room and she was suppose to be sorting through her clean and dirty underwear.  I was explaining that sometimes you have to just give it a little sniff test to see if something is clean or dirty.  She smells a clean pair and says "Mom, clean underwear smell like shoelaces, Huh?" 
-I know you have all smelled a pair of underwear to see if it was clean, don't be saying oooh."

Grampa was cleaning out the hot tub today and had it refilled with cold hose water.  Livee was dying to get in it and I told her no.  She informed me that she was going to go ask grampa.  She comes back down stairs with a very upset face and arms folded, "I am not talking to grampa, anymore."  I am sure you can guess what his answer was. 

Zucchini

So this post is for any of you out there that are swimming in zucchini like we are. I made this for dinner tonight and it was delicious.  Even my kids ate it.  Thank you Taste of Home for the recipe. 

Ingredients

  • 4 cups shredded unpeeled zucchini
  • 1/2 teaspoon salt
  • 2 eggs
  • 1/2 cup grated Parmesan cheese
  • 2 cups (8 ounces) shredded part-skim mozzarella cheese, divided
  • 1 cup (4 ounces) shredded cheddar cheese, divided
  • 1 pound ground beef
  • 1/2 cup chopped onion
  • 1 can (15 ounces) Italian tomato sauce (I used regular, and added garlic, oregano,and basil)
  • 1 medium green pepper, chopped

Directions

  • Place zucchini in strainer; sprinkle with salt. Let stand for 10 minutes. Squeeze out moisture.
  • Combine zucchini with the eggs, Parmesan and half of the mozzarella and cheddar cheeses. Press into greased 13-in. x 9-in. baking dish.
  • Bake, uncovered, at 400° for 20 minutes. Meanwhile, cook beef and onion over medium heat until meat is no longer pink; drain. Add tomato sauce; spoon over zucchini mixture.
  • Sprinkle with remaining cheeses; add green pepper. Bake 20 minutes longer or until heated through. Yield: 6-8 servings.
